Yet Another Egg Sandwich

Here we go again…


Per sandwich:

  • 2 eggs
  • salt, to taste
  • pepper, to taste
  • 1 slice cheddar cheese
  • Bread of choice (I used 2 slices of Tuscan Pane)
  • 2 tablespoons Trader Joe’s Pepita Salsa


  • In a bowl, crack your eggs and add salt + pepper. Whisk until fluffy.

  • Lightly grease a pan and pour scrambled egg mix.


  • When the eggs are mostly cooked, add the cheddar cheese. Remove from heat.


  • Toast your bread and spead salsa on one side of the bread.


  • Add the egg with cheddar on top (note: my cheese did not melt because it is the vegan kind).


  • Close your sandwich, cut in half, and enjoy!
